Plum-good mocktail
Proof that the zero-proof pour can be the most interesting one on the bar. PlumGood — Sunsweet's plum beverage — simmers for half an hour with a sprig of rosemary until it concentrates into something dark, glossy, and faintly piney, then a single ounce goes over ice under a rush of elderflower sparkling water. It drinks like something a bartender labored over, and the deep plum color against the rosemary sprig is pure spring-table theater. The Recipe
Plum-Good Mocktail
Ingredients
- 1 cup PlumGood (Sunsweet)
- Elderflower sparkling water
- 1 fresh rosemary sprig, plus more to garnish
Instructions
- Reduce. Combine the PlumGood and rosemary sprig in a small saucepan; bring to a boil, then simmer 30 minutes.
- Strain and build. Strain and cool. Pour 1 oz of the reduction over ice and top with elderflower sparkling water to taste.
- Garnish. A fresh rosemary sprig in each glass; serve immediately.
OTC notes
The reduction is the recipe. Thirty minutes turns juice into a syrupy base with real depth — do not shortcut it.
One ounce is enough. The concentrate is intense; let the sparkling water do the lifting.
Make the base ahead. It keeps a week chilled, so party-day service is pour-and-top.
Smack the rosemary. A quick clap between your palms before garnishing releases the aroma.

Where do I find PlumGood? It is a Sunsweet product — look near the prune and juice section, or substitute prune juice for a very close cousin.
Can I make it a cocktail? Easily — an ounce of gin or vodka slides right in before the sparkling water.
No elderflower sparkling water? Plain sparkling water plus a small splash of elderflower syrup, or any botanical sparkling water you like.
How far ahead can I batch it? The reduction holds a week in the fridge; build each glass fresh so the bubbles stay lively.
Is it very sweet? No — reducing concentrates the fruit but the sparkling water stretches it dry. Add simple syrup only if your table runs sweet.
